    i know this is the weight watchers board, so recipes are as standard but the purpose of this thread is to have them all in one place...something which i find very useful when i am doing a meal planner!

    carrot and coriander soup

    1 tbsp oil
    1 onion chopped
    1 tsp ground coriander
    1 potato chopped
    450g carrots
    1ltr veg stock
    fresh coriander

    heat the oil add the onion and fry till onion is soft stir in ground coriander and potato cook for 1 min
    add carrots and stock bring to the boil then reduce the heat cover and cook for 20mins
    tip in food processor/blender add some fresh coriander and blitz until smooth.

    this works out at 0.5 points if u divide it into 5 servings it can be frozen

    steak and mushroom stroganoff

    1 tbsp oil
    1 red onion chopped
    2 garlic cloves chopped
    1 tsp paprika
    1 green pepper chopped
    200g mushrooms sliced
    2 tbsp red wine vinegar
    150ml beef stock
    200g rump steak sliced all fat removed
    150ml fromage frais low fat

    heat the oil and fry the onion for a few mins add garlic and paprika and cook for 1-2 mins. add pepper and mushrooms fry for 5-8 mins until soft.
    add vinegar,boil to reduce until almost evaporated, then pour in the stock and bubble for a few mins until thickened slightly. add the beef and cook for 2-3 mins depending on how rare you like it then stir in the fromage frais and season.

    i did this with 300g cooked rice and divided into 4 the meal including the rice is 4 points and i had it tonight and really enjoyed it

    American Style Pancakes

    Makes 27 pancakes at 1 propoint per pancake

    250g (9 oz) Plain Flour
    2 tsp Baking Powder
    50g (1 3/4 oz) caster sugar
    1 Egg
    250 ml (9fl oz) skimmed milk
    Low fat cooking spray

    Cook a tablespoonful of mixture for each pancake. Cooke for about 1 minute or until the bubbles form on the surface of the pancakes and start to pop. Flip them over and cook for another 30 seconds until golden. Remove to a warm plate and repeat until all the batter has been used.

    We have them with Blueberries and Strawberries which are 0 propoints. Quite filling and very yummy Wink
